This chicken and rice casserole recipe is old school comfort food with a facelift. I’m talking Chris Jenner style facelift. It’s creamy, cheesy, easy to make, and inexpensive. Meet me in the kitchen. All right, we’re going to get the party started by breaking down this rotisserie chicken. You can use leftover chicken if you want to. We’re going to remove the skin, bone, cartilage, leaving behind the juicy, hopefully flavorful uh rotisserie chicken. If it’s not flavorful, we’re going to season it up. No worries. I’m going to set the wings aside as a little snack, and then we’re going to basically debone the rest of this by hand. Again, you want to be careful. Make sure you don’t leave any bone fragments, any cartilage, anything that’s, you know, inedible or that would be unpleasant to bite into. Want to remove the skin as well. Wings for snack. You save the skin for snack, too, depending on how hungry you are. And just break down the rotisserie chicken. We’re going to chop it into bitesized pieces. And this is going to be what we’re using for our recipe today. You can use leftovers from, you know, another recipe. You can use canned chicken if that’s your thing. Really, no right or wrong way to go about this. just get some protein in. Now that the protein is prepped, it’s time to get to work on our veggies. We got bell pepper, we got jalapeno, which is optional. If you don’t want any heat, you can leave that out. You can just stick with bell pepper. And we got some onion. Can’t forget the frozen broccoli. Again, all of this comes together real easy. A lot of stuff that you probably already have at your house, in your pantry, in your refrigerator, or your freezer, and it’s going to be super flavorful, perfect for meal prep or even a Sunday dinner. You really can’t go wrong. Fire this up with some little dinner rolls on the side. Maybe a salad. You’ll be good to go. Going to dice up these bell peppers. Do the same thing with our jalapeno. I’m using red bell pepper because we got green coming from the jalapeno and the broccoli. But if you’re not uh doing this for presentation purposes, use whatever you got. [Music] All right, guys. Meanwhile, we’re going to heat our skillet with a little oil, cook our veggies. Again, we got onion, bell pepper, and some jalapeno. We’re going to add a little garlic, some seasoning. They’re going to add some flour to effectively make like a little r. It’s going to help bind everything together when it goes into the oven as a casserole. Give it some uh you know texture. It’s going to be good, guys. Trust me, this one is great for meal prep. Reheat it. Travels well. Kids like it. My son’s on this huge rice kick and one of the only veggies he likes consistently is broccoli. So, this has been a go-to option right here for the kids. Anyone out there with toddlers know how difficult it can be, finding something that they, you know, enjoy to eat on a regular basis. So, here we go. [Applause] So, while we’re sweating down the uh veggies here, we’re going to season it up with my all-purpose seasoning. If you haven’t tried this yet, you can grab it at mrmakeappen.shop or just use whatever your favorite allpurpose seasoning is, or just a little salt and pepper. Once the veggies get nice and tender, then we’re going to go in with that flour we talked about. Going in with some Italian seasoning, a little garlic paste, one packet of sessone. Mix all that together. Smelling amazing in here, especially once that garlic hits the skillet. You can have this whole recipe done in less than an hour and it’s good for 8 to 10 servings at least. Serve it up with a little salad on the side or some dinner rolls. Got yourselves a nice, easy, comfort meal for dinner. [Applause] So, we got our chicken broth in there. We’re going to go ahead and uh bring the heat up to to high, medium high at this point. Allow that to kind of come together. You’ll see that the R’s kind of taking shape nicely with the with the broth. Nice and thick. Then we’re going in with two cups of heavy cream or half and half. Even whole milk could work here. Going to give that a mix. Bring that up to a simmer. Then we’re going to add in our cheese, our chicken, our broccoli. Once the rice is done, we’ll add that as well. Taste as you go. Adjust the flavor to your preference. [Music] friends. Then we’re going to add it to a casserole dish. Pop that in the oven and you got yourself a fantastic chicken, broccoli, and rice casserole. The best thing about chicken/rice casserole is it's dump and go, making precooking and multiple pan cleanup unnecessary. This recipe completely negates that. Would be great if you could rework this so that it goes straight into the casserole dish without the other work.

I have out of town guests coming in on Sunday evening. Nothing fussy or fancy is required because my βguestsβ are family, so this is perfect! Weβll likely have leftovers for lunches, too!With travelers, you never know what time theyβll arrive. This seems like a PERFECT meal to heat up when they arrive. As Chef says, add a salad and some rolls and, viola, you have a full, cozy meal.
One of my guests always complains that I donβt make enough rice. Complaint satisfied! LOL
