
I’ve been given a large amount of Carolina Reapers and so far I’ve fermented some, smoked some, dried some and I still have a ton left over!
I’m about to make a pepper jam and am wondering how many reapers is too many reapers. I’m using the chili pepper madness recipe that calls for 4-5 cups of mixed peppers for 4 pints of jam. Would I be insane to use 1 cup reaper and 4 cups bell peppers?

Those aren’t reapers. And yes… a ratio of 1 to 4 of any super hot/bell pepper ratio is going to be obnoxiously hot. Super hots are wildly thin walled compared to bells. It would take quite a few pods to get that ratio.
My advice… follow the regular recipe. Add minced pods in at the end to your desired heat level. I bet all it takes is like one tablespoon, max.

1 cup of bhut jolokia to 4 cups of bell sounds fine to me, so long as you’re not really packing in the bhut jolokia to fill every cubic millimeter of that measuring cup. I say this as someone who really likes hot things and would only use a little bit of pepper jam, with like crackers and cheese, because I’m not sure how else to consume it.
One ghost per pot of chili is irresistibly delicious btw

Thanks everyone, this was super informative. I ended up using 4.5 cups of bells plus 6 seeded and 6 unseeded ghosts. It was the perfect amount of heats
