🍋 Ingredients (Serves 4–6):
– 1kg white potatoes, peeled and cut into wedges
– ⅓ cup Bertolli Extra Virgin Olive Oil
– ½ cup lemon juice
– ⅔ cup chicken stock
– 1 tsp Dijon mustard
– 1 tsp dried oregano
– 2 garlic cloves, sliced
– Salt & pepper
Greek Meatballs (Keftedes):
– 750g pork + beef mince
– 1 onion, 1 tomato, 2 garlic cloves
– ⅔ cup mint, 2 eggs, 3 slices soaked bread
– 1 tsp oregano, 1½ tsp salt, 1 tsp pepper
To serve:
Greek salad with tomato, cucumber, capsicum, onion, feta, and a drizzle of Bertolli olive oil 🫒
👩🍳 Method:
1️⃣ Bake the lemon potatoes for 45 mins at 200°C.
2️⃣ Mix and shape your meatballs.
3️⃣ Add them on top of the potatoes and bake for 30 mins more.
4️⃣ Finish with herbs and serve with Greek salad.

A meal that has been in my family for generations. Greek meatballs or geathers with lemon potatoes. Simple, rustic, and full of the flavors I grew up with. Proli extra-virgin olive oil brings a rich Mediterranean flavor to this one pan dish. Plus, the health benefits of anti-inflammatory polyphenols and monounsaturated fats. The potatoes start cooking while you work on the meatballs. They stay moist and juicy by adding bread, soak in either water or milk, sweeping it out, and working it through the mix for a few minutes with your hands. You nestle the meatballs amongst the potatoes. Brush with more extra virgin olive oil and bake until golden. It’s delicious served with a Greek salad.
