Tailgate Tastes is sponsored by Engles. Hi, I’m Susie Neil. This is Engles Tailgate Taste. You’ve got to take a side dish to the tailgate, but you’ve had a busy week. What are you going to make? What about my marinated white bean salad? It’s really easy because I use canned beans and precut produce from Engles. I’ve got three different white beans that I drained and rinsed. I’ve got navy beans, canalini beans, chickpeas, also nutritious, proteinpacked, and with a zesty vinegarette. It’s going to be great with all those grilled meats at the tailgate. I like to add a little pop of flavor with some onion. That’s red onion that I picked up already diced at Engles. Got some celery for some crunch. Colorful bell peppers. Look at those. Aren’t they beautiful? Thank you, Engles, for chopping them for me so we can go ahead and start having fun instead of cooking in the kitchen. I’m going to mix all this together. Look at how festive and beautiful that looks. But what’s a bean salad, especially a marinated one without a dressing? I’ve got some apple cider vinegar. I’m going to add some olive oil, a little dijon mustard to give it a little bit of emulsion. Get that right in the jar. Jars are my favorite way to make dressings because they just pop right into the dishwasher so easily. That’s a little bit of honey. Got some salt and pepper. And finally, some minced garlic. I love the convenience of jarred garlic and it works perfectly in this recipe. I’ve got my little tiny whisk and I’m just going to give it a little. All right, dressing’s done. Going to add it to the bowl. Put it in your favorite plastic container in the refrigerator overnight. Pop it in the cooler in the morning. Head out to the tailgate. We’ll see you there.
