I have shared a lot of creamy soups this fall, and the most common question I get is, “How do you make soup creamy without dairy?” Well, here’s the secret. Eggs. No, not like egg drop soup. Instead, we’ll whisk them well and slowly stir in the hot broth, which then thickens into the most silky, rich soup. No cream needed, and it doesn’t taste like the eggs at all. So add some chicken, rice, lemon, and you’re in soup heaven.

  1. 😂 Its cap. You can definitely taste the eggs, sis. Y'all wanna creamy soup, take some of your veg & puree. Simple fix 👌🏽

  2. You can instead do white beans. They’re cheaper, which we can all use in this economy, and they don’t taste like…well…eggs.

  3. You can instead use blended white beans. They’re cheaper than eggs, which we can all use in this economy, and they don’t taste like…well…eggs.

  4. you could easily blend some soaked cashew or white beans or chickpeas or boiled potatoes or even a block of tofu. Eggs are awesome but when added to soup like this it gives the soup the appearance of partially digested food that has been thrown up by someone.
