If you love the Starbucks caramel brulee lattes, you can make that same sauce at home for almost nothing. Grab a pot with high walls and add 45 g of water, 15 g of corn syrup, and 200 g of sugar. Throw it over medium heat until it starts to bubble around the edges. And as soon as the sugar is fully dissolved, crank the heat up to medium high. It’ll boil a lot, and after 6 minutes will be this deep amber color. Turn the heat off and add 120 g of heavy cream, 45 g of salted butter, and 14 g of vanilla extract. Once the butter fully melts, it turns into this glossy, buttery caramel that I usually spoon into a cup and pull some espresso. I’ll pour this over some ice and top it off with milk, whipped cream, and a little bit more of that caramel sauce. And I promise if you try this, you’ll realize you’ll stop spending $6 at Starbucks. • ½ cup (120ml) heavy cream
• 3 tbsp (45ml) water
• 1 tbsp (15ml) corn syrup
• 1 cup (200g) sugar
• 3 tbsp (45g) butter
• 1 tbsp (14ml) vanilla extract
In a sauce pot with high walls, add the water, corn syrup, and sugar. Heat on medium until it starts bubbling around the sides, then turn up the heat and cook until it turns amber, about 6–8 minutes.
Take it off the heat and slowly whisk in the cream. Then add the butter, and vanilla. Once it cools, it thickens into a rich, buttery sauce that you can use to make the starbucks version at home.

Pro tip, boil off the water with the lid on to wash crystals off the sides and then let it cook off after it's all dissolved and allow to carmelize.

I have ptsd from making caramel. One time I tried to make it in my early 20s and I scorched the pot, and the spoon. The caramel became really hard and wouldn’t come off and I had to just throw everything out. Since that day… I’ve never attempted it again.
