    Only way to really screw it up is to not use enough (or go with a crap recipe).

    Screwing up is using premade here. Absolutely everything is packed with chilli. I mean, if you like extreme chilli then great, but if not you’re on your own.

    I once bought some pork tenderloin from the fancy grocery store not noticing it was pre-marinated. I rubbed it with Cajun seasoning and smoked it. The Cajun really didn’t work with the sweet and soy Asian marinade the store used. In fact the store marinade might have been of low quality because a sweet Asian marinade on its own should work with a pork tenderloin.

    Sometimes you gotta eat your mistakes.

    Either you’re learning or your screwed up seasoning is probably better than pre seasoned anyway.

    For the same reason I bought a pellet smoker, I also started buying premixed seasonings like meat church. I don’t want to be the one to blame for a bad thanksgiving turkey.

    Years ago, I get call from my (now ex) wife while she’s at the grocery store. “I want ribs, will you smoke some?”

    So of course I say hell yeah.

    “They’re sold out of like everything, all they have are preseasoned.”

    “those are garbage.”

    “I want ribs.”

    “Fine, but don’t blame when we toss them out.”

    She brings them home, and I see on the package… “Bake in bag.” What the f*&k? I take them out of the plastic bag and put them on the smoker. Six hours later we’re devouring some of the best ribs I’ve ever had.

    Wow. I was put to shame. Did it again the next week, side by side with my “normal” salt and pepper ribs and had friends over. Hands down, the preseasoned bake-in-bag ribs were amazing.

    I found a rub recipe online that was similar in flavor profile to the bagged ribs, and after a few months of tweaking it, I have ’em beat now.

    My only thought here was: Did you read the ingredients and understand what they were?

    I taught myself to make my own seasoning blends right after I learned to really comprehend the horrible ingredients in items that are preseasoned. .

    I think you meant “screwing it up myself for pennies on the dollar” haha

    But also learning the flavors this way has really helped me, premixed are impersonal
