This was delicious and got good reviews at the house. Also smelled great all day while it was simmering.
I was seeking some input, as my beef was just a bit tougher than I would have liked, but maybe the [pre-cubed chuck product I used from Whole Foods](https://a.co/d/3gJybQJ) was too lean, or the pieces were too small. I did the oven step for 2 total hours and reduced a bit on the stove per instructions.
To note, I couldn’t find the Asian shallots (they had Chinese but out of stock, I think the SE Asian are smaller), and used Hawaiian macadamias instead of the candlenuts.

I like the curry much more caramelized. Brown instead of this yellow orange hue. Such a good curry.
