Here’s another one of my go to summer salads. This French-style inspired lentil salad is basically what I call summer in a bowl. It’s light, zesty, and creamy from the addition of the feta as some additional protein boost! It’s quick and easy. I threw together some crunchy veggies, fresh herbs, and a tasty Dijon vinaigrette and hey presto youe salad is ready:)X

This is also great to make-ahead for lunches or an easy picnic side. Best served chilled or at room temperature. I can say if you leave it in the fridge to develop the flavours it’s even better. You decide – your choice

Ingredients:

For the lentils:
1 cup of lentils of choice (I used lentilles vertes)
1 small bay leaf
1 small onion (peeled and halved)
1- 2 garlic cloves (lightly crushed)
Salt (I added it during cooking but you could added after cooking. Your choice)

For the salad:
1 small cucumber (chopped)
1 handful of ripe tomatoes or 2 medium (chopped into bit size pieces)
1/2 of a small red onion or shallot (sliced thinly or chopped finely)
1 carrot (grated but optional)
1/4 – 1/2 cup chopped fresh herbs of choice (I used parsley, chives, dill and mint)
Feta cheese crumbled in the salad and on top (you could also use goat’s cheese)
Seeds or nuts if you can have them as extra source of protein and fibre

For the dressing:
3 tbsp extra virgin olive oil
1 tbsp Dijon mustard
1 tbsp red wine vinegar (alternatively you could use lemon juice as the acid)
1 tsp maple syrup or honey (optional)
1 garlic clove (grated)
Salt & black pepper to taste

Hey guys, welcome back to another cooking video with your one and only Chloe Cooks in the kitchen. Look at all these beautiful array of ingredients we have here. Very summer driven. So, let’s make this delicious, refreshing French style inspired lentil summer salad for you. Let’s go. Woo! Into this pan. We’re adding one cup of lentils that’s been washed. We’re going to add just enough water to cover it. Bay leaf and two cloves of crushed garlic. Small onion cut in half and a piece of ginger. Going to add a bit of salt and we’re going to put the heat on. We’re going to start that hot. We’re going to start the fire quite high. And then once it starts to boil, we’re going to put the lid on and we’re going to cook that for about 25 to 30 minutes or until tender. Okay, it’s boiling now. So, let’s put the lid on and we’re going to reduce it to medium high. Okay. So, I’ll see you back here once it’s done. Let’s check our lentils. Look how much the water has evaporated. Okay. I think these are cooked. They’ve been cooking for 35 minutes. So, let’s check these. Okay. These are done. And you want them to be a bit firm as well cuz you don’t want them mushy because they’re going into a salad. And these are cooked. Brilliant. Okay, we’re going to take that off the fire. Switch this off. We’re going to set that aside. I’m just going to take the lid off so it can cool a bit quicker whilst I prep the salad ingredients. For the salad, we’ve got one small chopped cucumber. All of the ingredients have been washed. And we’ve got about six to seven chopped tomatoes, baby tomatoes. One carrot, grated and organic. You can use whatever carrot you have. We’ve got half of a red onion chopped finely. And we have some fresh herbs here. I’m using a selection of parsley, chives, dill, and mint here, but of course you can use whatever combination you want, but this is the combination that I’m using. I love fresh herbs because I do think they give your salad and anything that you prepare a really beautiful freshness and flavor. And they’re also good for you as well. And we’ve got some feta cheese. This is optional, but I’m adding a bit of protein. And you can use chicken, you know, salmon, whatever protein you like. So, I’m just going to add a bit of this to the salad as well at this size. Just going to break it up. Just going to give that a little mix to combine it all together. We’re going to set that aside and we’re going to move on to making the vinegaret to go over the salad. Okay. For the dressing, we will use the following. 3 tablespoon of olive oil, [Music] 1 tbspoon of Dijon mustard, [Music] tablespoon of red wine vinegar, and a teaspoon of honey or maple syrup. I’m using maple syrup. [Music] Going in with some salt and black pepper to taste. [Music] And we’re going in with a clove of garlic. That’s optional. [Music] Lid on. And a good shake. [Music] Let’s give this a taste. Perfect. Let’s set this aside until the lentil is cool enough to be combined with the other ingredients. Guys, I did it again. I thought my camera was recording and it wasn’t. I’m a little bit annoyed. Anyways, I’ve added the cool lentils to the vegetables. And now we’re going in with the dressing we made earlier. Let’s give it a little mixy mixy. [Music] Let’s give that a taste. That tastes really good. The lentils are so nutty. And as you know, lentils are good for us. So, fiber, a bit of salt, and now we’re going in with some black milk. This is tasting really lovely. Beautiful salad. Grab another spoon. [Music] Beautiful. We can pop this in the fridge and cool it down for about half an hour to an hour, but we can serve it up. So, let’s plate up. [Music] Adding a bit more fetter on the top. A few more sprigs of herbs. Some olive oil. We’re going to add some fresh pumpkin seeds for a bit of crunch, a bit more protein, potassium and fiber, you know, zinc, you know, all of those goodness that we’re going to get out of this bowl of salad. And we just adding a bit more to give extra nutrients. A good crack of pepper on top of that. And a little pinch cayenne pepper on the top. Look at that. That’s what we’re talking about.
