You need just 5 ingredients to make the best luscious lemon bars with the perfect balance between sour and sweet.
Let me show you how to make lemon bars. They only take five ingredients and oh my gosh, it’s one of my favorite desserts. Preheat your oven to 350° F and lightly grease an 8×8 or 9×9 pan and line it with parchment paper. Then you want to dice up one cup of salted butter. I use salted just cuz it’s convenient. If you’re using unsalted, you’re going to want to add a little pinch of salt. Add all of that to a large mixing bowl along with two cups of allpurpose flour and half a cup of granulated sugar. Then you’re going to use a pastry cutter, a food processor, or the two knife method to blend it all together. It takes longer to do it this way, but I’m showing you that you don’t have to have any fancy tools to make these. Just keep going until it looks like coarse sand with little pebbles in it. Then you’re going to press this into the bottom of your pan. This is a traditional shortbread crust. So, you get a nice sandy pile and you shake it to even it out. And then use your fingers to gently press it down until it’s compacted. Then, we’re going to bake this in the 350° oven for 15 minutes. While the crust bakes, we can start on our lemon layer. In another mixing bowl, we’re going to combine 1 and 1/2 cups of sugar and 1/4 cup of allpurpose flour. Give it a little mix to combine. Next, add four large eggs. And you want to mix this until it’s smooth. Juice some fresh lemons. You’re going to need a whole cup of lemon juice. How many lemons it takes to get to a cup depends on how juicy they are. Today it took five. Sometimes it only takes four. Sometimes it takes six or seven. And pour it in and mix it on a low speed until it’s combined. Grab the shortbread crust from the oven. And then you want to ever so gently and slowly pour the mixture over the shortbread crust. If you go too fast, it’ll create little divots. Then we’re going to carefully return this to the oven for about 40 to 50 minutes until it no longer jiggles. They should come out of the oven with a nice brown top. Once they’re completely cooled, go ahead and remove them from the pan and dust the top generously with powdered sugar. I always cut mine into nine squares, but you can always go smaller. Who knew five ingredients could taste so good? [Music] Always going to be one of my faves.

I see lots of experienced people do it, but I've never understood why they grease the pan and then put parchment paper on top of the grease. If you're using parchment paper, why grease the pan?
