    Been doing this for years. Even make my own components where I can. Grow garlic, onion, capsicums and chilli’s. Smoke them all, dehydrate and process. My wife can’t have salt so rub flavour is important to me cause I can’t rely on salt.

    Can you explain the additives like tricalcium phosphate or paprika oleoresin? I’m sure they are perfectly safe to eat and everything, but as a cook I’m curious on how you choose those.
