My brother-in-law
showed me how to make this Korean carrot salad, and there’s
a secret ingredient here that makes it so exciting. Start by
cutting your carrots into matchsticks. I love this
julienne slicer because it makes it so easy. Or you can use pre
shredded carrots for the bell pepper. Here’s the right way to
slice it, cut off the top and bottom, then trim out the seeds
and thinly slice into strips. You can use any color bell
pepper here. Also chop up some green onion. And finally, chop
some fresh cilantro, which adds so much freshness. So do not
skip this. The dressing is even easier. Combine white vinegar
with sugar, soy sauce and some sesame oil. What makes it really
exciting is some crushed red pepper flakes. Add that to
taste, depending on how spicy you like it, toss your salad
with the dressing. Now, cover and make sure you let it
marinate for at least 20 minutes in the fridge when you’re ready
to serve it, garnish it with some toasted, crunchy cashews.
This is spicy, so flavorful and super satisfying. Find the
