Presenting a quick weightloss salad made from the infamous (atleast for me) beetroot. TBH I hate beets/beetroot, there is this earthy flavour to this vegetable which I absolutely detest!
Anyways convert these nightmarish vegetables into my special salad and its an absolute delight to have. The sweet-earthy flavour of the beets meets the salty tangy flavour of feta. This coupled with the astringent and peppery jarjeer/rocket leaves are a match made in salad heaven!
So say no more and try it.
Ingredients: (For 2)
1 medium Beetroot / 1/2 of large beetroot (Pressure cooked and sliced thinly)
Jarjeer leaves (Cleaned 2 fistfuls/as per requirement)
Feta Cheese (As per requirement)
Pomegranate arils (fistful)
A squeeze of lemon/lime
A drizzle of olive oil
Salt (if required – Feta is already too salty ..)

How does the pressure cooked beets taste? And why not roasted?
