Had this unique shio ramen from Dashito Komugino Kanousei in Osaka. There were special instructions on how you eat it. Start by sipping the broth and tasting the noodles. Then you make a pesto by grinding the basil and salt with this little mortar and pestle. You add broth to the pesto and dip your noodles in. Then take some of the dried tomato mousse and add it to your pesto. Not pictured but it also came with this little dipping sandwich that had a whipped ricotta like spread and a thin slice of pork.

    Why can’t they just serve pesto to you instead of forcing you to make it yourself causing your ramen to cool while you’re grinding away
