500g unbleached flour
400g water
12g salt
80g sourdough starter

Just your standard recipe.
Left it out on the counter for 7 hours, put it on a pan and shaped it a bit. 425F oven, did a 7 minute score and baked it for another 38 min. I don't have a Dutch oven or anything.

I do this same process on most days but something was different today. No idea why. It just worked like a charm.
