First time breaking down a whole chicken🐔
Roasted the bones and veggies, simmered them low and slow for hours, and ended up with a clean, golden broth!

Made my own shoyu tare and karaage-style chicken thighs first time also.

It took patience (and a lot of Youtube rabbit holes).
Not perfect but for a first "real" ramen from scratch, I’m pretty proud. 🍜
Next stop: pork chashu, miso tare and maybe even making my own noodles.
The obsession has begun..

    Please stop putting karaage in soup. Leave it on the side.

    I’d recommend leaving the karaage as a side dish, and more soup in the bowl!

    Nice first attempt; your own noodles will change your life.

    Noodles are way easier than it might seem, can whip em out pretty fast just make sure you prepare them at least a day ahead of time!

    Wow you even roasted the bones! I have made chicken broth, but I never went that extra mile to brown the bones. I have for pork broth, but not chicken. I bet it was super delicious. Looks amazing, and I can just feel the collagen soaking up all the wrinkles already!
