La Goulue Palm Beach, the island’s beloved French brasserie, is hosting a remarkable evening celebrating the elegance of Billecart-Salmon Champagne. The exclusive Founders’ Cuvée Tasting Dinner pairs the legendary Champagne house’s most refined vintages with the modern French cuisine of Chef Gwen Le Pape, and Sommelier Xavier To Van Trang.

Guests will also be joined by Alexandre Bader, General Manager of Billecart-Salmon, for an immersive experience in the craftsmanship of Champagne and culinary finesse.
The four-course menu showcases artistry and indulgence — each dish thoughtfully paired with rare Billecart-Salmon Champagnes served from magnums. Highlights include a delicate Le Chou Tsarine amuse-bouche crowned with Altima Caviar, an Octopus Terrine with Romesco and Lemongrass Pesto, and a luxurious Wild Salmon Roulade with Pink Peppercorn and Champagne Sauce. A Comté with Fig Compote and a Rhubarb-Raspberry Gratin with Champagne Sabayon round out the feast, each paired to perfection with a different cuvée.
