    I’ve seen finely diced as well as these even in Mexico, I feel like it’s more shop preference. These look authentic as fuck so throw some red salsa on there.

    This posts reminds me of when I went out for tacos after a shift with cooks and one just frowned upon some stems of cilantro in the mix.

    I didn’t like that guy after that day.

    Onion chunks are a bit large but other than that those look pretty damn good. Is there a problem other than that?

    Every taco place has different onions, some do a rough chop like this and some do a finer dice. Some places give you a bag of onions and cilantro on the side, some places give you roasted peppers and cebollitas and radishes on the side. Some places the green salsa is hotter, some places it’s the red.

    Those tacos look authentic and delicious, and as a kitchen professional you should understand that there are levels to this shit, you are at the styrofoam plate level on onion dicing. Sometimes the dice needs to be perfect, this is not one of those times
