    It’s some sort of sake (salmon) nigiri. What’s that on top? Sesame and…mushroom? Nori ash?

    Depending on where this is it could have a grain mustard on top there’s a lot of different types and some can even use fruit occasionally or it can be just some local ingredients to be made in a paste if this is a higher end place that does mixing by hand or a smaller appliance

    Sake Toro is salmon belly, and this salmon is farmed.
