There’s so many good things I can say about this feta avocado chickpea salad. It’s plantforward and high protein. It’s flexitarian, so you can add chicken, shrimp, or salmon, or remove the cheese for plant-based. Add the chickpeas, avocado, cherry, tomatoes, cucumber, red onion, and feta to a bowl.
