Lets make Lentil, Chickpea & Sweet Potato Curry! Recipe inspired by @TishWonders ⬇️:

Ingredients:

1/2 red onion, diced
1 medium sweet potato, peeled and cubed
1/2 red bell pepper
1/3 cup of roughly chopped parsley
2-3 cloves garlic, minced
1 tbs minced ginger
1 cup cooked lentils
1 cup cooked chickpeas
1 14 oz can coconut milk
1 cup water
2 tbs tomato paste
1 tbs cumin seeds
1/2 tsp fennel seeds
1 tbs Curry powder
1 tsp Garam Masala
Salt & pepper to taste

Let’s make lentil chickpea and sweet potato curry. When I tell y’all this one pot curry recipe could be made in like 30 minutes, but the flavor is like it’s been simmering on low all day. You got to make this. First, we need to prep our veggies. I diced half of a red onion, half of a red bell pepper. Then I peeled and cubed a medium sized sweet potato. Set my pot to medium heat. Added some avocado oil. And we’re going to saute our onions and peppers for a few minutes until soft. Season the taste with salt and black pepper. Then add ginger, garlic, cumin seeds, fennel seeds. Give that a quick toss and let that cook for a few minutes. Then add in some tomato paste, curry and garam masala. Give that a quick toss. Then we’re going to add in our coconut milk. Mix that up until fully combined. Then we’re going to season a taste again with salt and black pepper. Add in our lentils, chickpeas, sweet potatoes, a cup of water. Give that a quick toss just until fully combined. Bring to a bowl. Then we’re going to reduce it to simmer. Cover and let that simmer for about 25 minutes until the sweet potatoes are nice and tender. Then remove the lid. Give it a quick toss. Add in some freshly chopped parsley or cilantro and then you’re good to go.

  3. Quick pro tip: if you add the seeds straight into the hot oil and let them pop (rather than on top of other items), they will infuse the oil and the whole dish much more beautifully. 😊

    I make this dish all the time—it’s very good— but never tried with the addition of lentils. I’ll give it a go.

  4. Is that coconut milk or coconut cream? The cream is much sweeter I want to make this right so I need to know which one it is it looks like the cream because it's thick. Thanks
