Welcome to Cooking with the Trail Boss. I really like to use up leftovers. I don’t like to really waste any food. And in today’s day and age, it’s not something that anybody should be doing. But anyway, I like to take things leftovers or cook things out of my pantry and make delicious lunches or dinners. This is one of my favorites. Um, I have some leftover uh white beans, a can of tuna fish. I chopped up some celery. Got a half a leftover onion, which we’ll chop up and throw in there. Get my big hands on the way and cut myself. So, chop that up. Put that in there. Now we’re going to add a little high quality olive oil. About 1/4 of a cup. I just eyeball it. Some good balsamic vinegar. Not the cheap stuff. A little bit of salt. Fresh ground black pepper. Mix that up. And it tastes better chilled. So, we’re going to put this in the refrigerator to chill for about an hour and then we’ll show you how we plate it. Given this dish enough time to chill in the fridge, plate it up. I don’t exaggerate when I say this is actually one of my favorite things to eat. There’s enough here for two or three, depending on how big a eater the person is. Serve it with some crusty French bread. And there you have it. Simple, easy, delicious lunch that costs probably 25 cents a serve. Don’t forget to like, share, and subscribe.
