
A lot of MD compliant meal examples focus on summer ingredients, like tomatoes, cucumber etc. So thought I would showcase an autumnal meal, with in-season ingredients here in the UK.
- Pan fried salmon: I just salted salmon fillets and then put them skin side down in preheated EVOO in a pan. I turn down the heat to medium low, and then leave them for about 10 minutes. When they had mostly cooked through from the skin side, I flipped them to sear the other surfaces for 1 minute. (It's the method I use for getting crispy skin fish of any kind).
- Roasted baby rainbow carrots: Just seasoned them and roasted them with EVOO in a 180C fan oven for 30 mins.
- Black kale spaghetti: I made a sauce from black kale (aka cavolo nero or Tuscan kale) by boiling the leaves from a 200g bunch with 5 cloves of garlic for 5 mins. I then blended that with a bit more than a tablespoon of olive oil, grated pecorino, salt and pepper. I then tossed that with wholegrain spaghetti.
