Today we are making a fresh and colorful marinated green bean and red pepper salad. And the ingredients needed include two small red bell peppers, 12 oz of blanched green beans, one three package of firm tofu cubed, one thinly sliced green onion, 3 tablespoons of chopped parsley, 1 3 cup of olive oil, 1 3 cup of lemon juice, one minced garlic clove, 1 2 tepoon of salt substitute, 1/4 teaspoon of black pepper, 1 2 tesp of dry mustard, 1 2 tsp of oregano and 1 2 tepoon of cumin. Now let’s begin the process. Step one, roast the red bell peppers under a broiler until the skin is charred. Then place them in a plastic bag to steam and cool. Remove the skins and seeds. Then cut the peppers into thin strips. Step two, in a large bowl, combine the roasted pepper strips, blanched green beans, tofu cubes, green onion, and parsley. Step three, in a small bowl, whisk together the olive oil, lemon juice, garlic, salt substitute, pepper, mustard, oregano, and cumin until smooth. Step four, toss the dressing with the green bean mixture. Then refrigerate for several hours to allow the flavors to develop. Now your meal is ready. Have fun and enjoy.
