
Used up my leftover roasted turkey in the best way: turkey pozole rojo! The broth is packed with flavor from onions, carrots, celery, poblano peppers, fire-roasted tomatoes, and guajillo peppers (the real magic here). And of course, plenty of hominy.
Topped it off with avocado, green onions, cilantro, and radish slices. Served with tortilla chips and a quick cabbage slaw on the side. So good.
