Greek Stuffed Peppers (Yemista)
I used 7 medium sized peppers (use any sweet peppers you like)
1 large yellow onion chopped roughly
4 tablespoons of ghee or butter
1 and 1/2 to 1 and 3/4 pounds of ground beef
1/2 cup of uncooked rice
Salt to taste
garlic powder to taste
onion powder to taste
2 tablespoons of dried mint or extra for the potatoes while baking
1 and 1/4 cup of tomato puree or more (as per video)
1/2 cup of water or more (as per video)
Fry onions in the butter or ghee until butter is melted and add the ground beef. Fry until cooked and add the rice and seasonings. Add the tomato puree and water. Cook on low just until all the liquid is absorbed. Rice will be still very firm. Remove from the heat.
While the meat sauce is cooking, hallow out the peppers as shown in the video and save the tops to cover while baking. Bake a 350 to 375℉ oven covered with parchment paper and aluminum foil for 35 minutes. Remove the cover and let bake an additional 35 to 40 minutes or until everything is tender. If you need to add extra water and tomato sauce while baking, you can do that. Depending on your oven, you may need to.
Serve with your favorite side salad or a Greek salad. Goes great with feta cheese too!
