Quesabirria with Beef, Mushrooms, and Spinach

    Made this last night for dinner. I would call it semi homemade. Started with Trader Joe’s Birria. Just followed microwave instructions then shredded up the beef. Separately I saute some mushroom and spinach over olive oil with salt, garlic and onion powder. Finally assembled on a medium hot griddle. Tortilla with jack cheese. Once melted added the birria and spooned over some mushrooms and spinach. Served with the consomme on the side along with onions, cilantro, and limes.
