Fields is a fully "vegetal" restaurant, aka only plants + honey.

The experience was pretty refreshing, and we didn't really miss the fish or the meat from a traditional meal. In terms of flavors, it was on the subtle side, but some jus were pretty strong, and if blindfolded, you'd assume they're meat based. The desserts in particular were quite outstanding. It played a lot on textures, and is pretty environmentally aware and engaged, as one could guess.

Also, it's the chef who does the service, it creates a cool atmosphere where it's easy to interact with him, which is always a plus. (The maître d'hôtel got the best host prize from Gault and Millau this year, so that underlines the quality of the service).

Overall, I'd say that a full vegetal meal is a great experience, but maybe not for a first one. We went in summer, and I'm sure the winter menu is quite different. They only use local and seasonal produce, the chef is pretty proud of that lol.
