A little experiment with belly burnt ends: pre cubed or strips cubed before wrapping. Pre-cubed for the win!

Gonna do a ton of drumsticks and bone-in thighs since I messed up the Walmart order. And I’m gonna do them for about two hours at 275 or something so people can come for my throat

I’m doing chili, salsa, and deviled eggs.

    I did 2 chucks and 2 racks.
Ive never done ribs before, new to this whole thing.

I smoked them like 4 hours but they weren’t tender (ran at 250)
I put in foil with some butter and a few plugs of apple cider.

Resting everything now. Plan on saucing the ribs and using oven to finish the sauce.

Pork belly burnt ends, cream cheese, and pork loin that I also cut up some chop/steaks to try doing it two different ways.

  14. Between being sick for the last week and having my two year olds bday party yesterday, I’m not smoking anything. It’s the day of rest today

I cold smoked some cured pork belly and made bacon for the first time. Wife said it’s the best bacon she’s ever had so I guess I’ve peaked.
