Pork loin burnt ends ( a little dry, needs to sauce with more liquid), ribs for the freezer for a quick meal at the end of the week and waiting for the stall to end for a couple of shoulders.

I did 2 chucks and 2 racks.
Ive never done ribs before, new to this whole thing.
I smoked them like 4 hours but they weren’t tender (ran at 250)
I put in foil with some butter and a few plugs of apple cider.
Resting everything now. Plan on saucing the ribs and using oven to finish the sauce.

Ripped the skin off, pulled, seasoned and minimally sauced. Gonna make sandwiches, burrito bowl and nachos.

I cold smoked some cured pork belly and made bacon for the first time. Wife said it’s the best bacon she’s ever had so I guess I’ve peaked.
