I tinkered with it and came up with a pumpkin pie recipe and it came out good.

Some of this you're going to have to eyeball depending on your taste.

First a warning about pumpkin spice

I bought a batch from Frontier Co-op and it was heavy with clove it overpowered everything I had to add additional cinnamon and nutmeg to neutralize it. I've ran into a lot of inconsistencies with different all natural pumpkin spice blends.

This recipe can be made in a large ceramic coffee mug. I would use at least a 20 oz mug or ramekin because it does puff up especially if you are using egg whites.

I prefer to make this recipe in a small bowl and then pour into the mug because the molasses will clump up.

Ingredients

  • 1 large egg or 4 tbsp egg whites (room temperature).
  • 1.5 tbsp salted butter or neutral oil like avocado oil (if using oil or unsalted butter add a pinch of salt).
  • 1/2 tsp baking powder.
  • 3 tbsp almond flour (can use a little more if you want it drier).
  • 1+ tbsp brown sugar substitute (I used roughly 1.5 tablespoons allulose + 1/4 tsp molasses).
  • 1 tsp pumpkin pie spice (use more or less to taste)
  • 1+ tbsp pumpkin puree (I used one huge heaping tablespoon).

Optional

  • A couple of drops of vanilla extract into the batter.

Optional Topping

  • Keto icing

Preparation

  1. Melt butter in a microwave and add to a small mixing bowl (If using oil, add oil and a pinch of salt to a small mixing bowl. If using unsalted butter melt the butter add it to the bowl with a pinch of salt).

  2. If using butter let cool for a few minutes.

  3. Add egg or egg whites and start mixing it together (if you're planning on using molasses you might need a whisk).

  4. Add pumpkin puree and keep mixing.

  5. Add brown sugar substitute for molasses blend and keep mixing.

  6. And the rest of the ingredients one at a time starting with the baking powder while mixing.

  7. Pour into your ramekin or coffee mug.

  8. Let it rest a couple of minutes.

  9. Microwave on high at least 75 seconds (1100 watt microwave). 75 seconds will give you a very soft moist cake like texture. 90 seconds will give you a firm muffin like texture. I did it for 75 seconds.

  10. Carefully remove the coffee mug or ramekin from the microwave let it set for a couple of minutes to cool and then pop it out if it's moist on the bottom flip it over so it's bottom side up and it will continue to firm up as it cools.

  11. Top with your favorite optional topping if you want.

    I’m going to try it with some keto icing the next time I make it and maybe put some nuts in it for more complex flavor.

    I couldn’t get a whole picture of the muffin because I cut it in half to take a picture of it and so what is the boyfriend do…. pick up half the muffin and then eat it.

    I used the chocolate mug cake recipe from that website multiple times and made a chocolate mug cake by reducing the microwave time so it is cooked but barely set so it is super moist.

    And I apologize for any typos, my boyfriend wanted cake and wouldn’t leave me alone.
