Chicken Noodle Casserole Season

  2. Ingredients:
    – one medium onion, diced
    – 2 tbsp butter, divided
    – 4 tbsp flour
    – 4 cups of chicken broth
    – 1 can of Kirkland chunk chicken, drained
    – 1 cup mixed frozen veggies
    – 4 tbsp 1% sour cream
    – seasoning of choice
    – 1 340 g bag of “no yolk” dumpling noodles
    – 1/2 cup of breadcrumbs

    Instructions
    1) Sautee onions with 1 tbsp butter until translucent, add in flour and cook a bit
    2) Add broth and whisk, bring to a boil until it slightly thickens, add seasoning of choice I did s+p, dried thyme, rosemary, chives, chili flakes. Cook until thickened slightly
    3) Add frozen veggies and drained chicken and heat through.
    4) Turn off the heat and stir in sour cream
    5) Stir in noodles
    6) Place casserole mix in oven safe dish
    7) Melt 1 tbsp of butter and mix with bread crumbs, top the casserole
    8) Bake in oven at 425 for about 20 minutes until golden brown

    Makes 5 servings for around 435 calories each

    Short question, when do you eat this and how do you store it? (I guess you don’t plan on eating this 5 days in a row, right?)

    Looks like a dish I’d enjoy. I like the breadcrumbs. I’ll be giving it a try sometime soon.
