Pork chop cut from full tenderloin on a bed of polenta with broccoli soup on the side.
140 for two hours, then seared in cast iron. I could have been more patient with the sear, but the combined pork/polenta bites were exquisite.

Pork looks great! But thats odd to me to have 2 mushy sides. Id need crunchy baked broccoli or a baked potato.

I do a pork tenderloin every week. I saw a video on Facebook on recently that said pork tenderloin is the same cut of meat that filet mignon is on beef.
