Ingredients

400g (14 oz) smoked sausage, sliced
2 tbsp olive oil
10 medium red potatoes, diced
1 yellow capsicum (bell pepper), sliced
1 green capsicum (bell pepper), sliced
1 large brown onion, diced
4 cloves garlic, finely diced
8 sprigs thyme, leaves picked
salt and pepper to taste
500ml (2 cups) chicken stock
parsley, to garnish

Directions

Place a large frying pan with a lid over medium-high heat and add the olive oil. Once the oil is up to temperature, add the sliced sausage and sauté for 3-4 minutes until it develops some nice colour. Remove the sausage from the pan and set aside.
Return the pan to the heat and add the diced onion and sliced capsicum. Add a pinch of salt and sauté for 3-4 minutes until they start developing some colour.
Add the thyme leaves, a few good cracks of black pepper, garlic, and potatoes. Stir through before adding the chicken stock. Cover the pan with the lid and steam the potatoes for 20-25 minutes until they are almost cooked.
Add the sausage back to the pan and stir through lightly. Leave the lid off for the stock to reduce to a nice sauce consistency.
Once the sauce has reduced to a nice consistency and the potatoes are fully cooked, remove from the heat and garnish with some chopped parsley.

  3. last one i watched was not in 30 mins at all – it was the korean meatballs over rice…rice takes over 30 mins to cook alone…plus he did some shenanigans with the meatballs…so this dude is full of shit

  5. Hey, I watch your cooking videos pretty frequently and like your recipes. But I have a quick question. You seem to cook the same amount of food, as I do. Yet you are very slim. What’s your secret? Because I gain weight, even through healthy cooking with much vegetables and fresh ingredients, and it’s the same amount you cook for dinner. What do I do wrong? Or is it the types of food you’re cooking? Like a weekly plan? Hope, you can help me out with this riddle. 😅

  8. I made this and it rules!! I was skeptical of how big the potatoes were cut but only 20 mins on steam and they were completely soft! Full of flavour and very hearty. I even put some shredded cheese on mine 😂

  9. I randomly made about the same exact dish two nights ago, but with Portuguese chouriço instead. It was amazing, quick, and one of my go to meals.
