
My partner and I have a tradition of making soup every Sunday, or Souper Sunday. Today was the day for Avgolemono, it’s been on my list for awhile. Used chicken thighs and more lemon juice than called for and it’s a knockout. Added some zest as well. Cooked using long grain rice, unwashed, with homemade chicken stock. Garnish with fresh dill and salt/pepper.
