These cod fritters are a classic from the French Antilles — served hot at family gatherings and shared straight from the platter. Traditionally made with salted cod, the original version requires two full days of soaking, but this faster version gives you all the flavor with none of the wait.

🧂 Ingredients
2 cups of cod
2 eggs
1¼ cups of potatoes
1 cup of grated parmesan
1 tbsp of parsley
2 bay leaves
Salt and pepper to taste
Sunflower oil for frying
🍳 How I Make Them
– Boil the cod with bay leaves for 20 minutes, then flake it.
– Boil potatoes separately and mash them.
– Mix flaked cod, mashed potatoes, eggs, parmesan, parsley, salt and pepper.
– Shape small oval bites using two spoons.
– Fry until golden and crispy.
– Place on paper towel to absorb extra oil.
– Serve with tartar sauce or spicy mayo — your choice!
