So tonight for tea, I made this delicious corned beef hash. This was something my mother made quite frequently, and we’ve usually have this at least once a week! It’s easy to make and economical…the recipe goes a long way too 🙂 This isn’t a typical American style corned beef hash (I do have a more authentic corned beef hash recipe on the channel though!) This is a Scottish corned beef hash 😀 And it’s unbelievably tasty! Proper nostalgic this one…and something I haven’t made for such a long time.

What I used – (serves 4 – 5 people)
1.2 kg (2.6 lb) Potatoes | I used Maris Piper potatoes, try and use a floury or dry potato variety
Baked beans in tomato sauce | 400g can (14 oz)
Corned beef | 510g (18 oz)
1 Large onion | Sliced (and a little oil for frying)
3 Tablespoons fresh parsley
100g (3.5 oz) grated/shredded Cheddar cheese (optional)
A splash of milk and knob of butter for the mashed potato
Salt to taste

[Music] [Applause] [Music] Well, hello there folks and a very warm welcome as usual back to what’s for tea. It’s lovely to see you all again and I hope that I find you very well indeed. And tonight for tea, I made this delicious corn beef hash. This was something my mother made at least, you know, at least once a Fortnite we would get this because it’s really cheap to make. It goes a long way and it’s really tasty and ever so easy to make. This isn’t like a standard Americanstyle corn beef hash which I have done for the channel before. This is a more sort of British take on a corn beef hash and it is lovely. So go over to your cooker, grab yourself a large pan. We’re going to start the tatties. So get your potatoes into your pan. We’re just going to cover these up with water. bring them to the boil and then we can add a we dash of salt once they’re at the boil and let these simmer away for about 20 25 minutes until they are nice and tender and ready to mash. So once they get going you can pop them out the way and then we’re going to fry up an onion as well. We’re going to mix this through the potato and onion and potato is a match made in heaven in my opinion. So a we tablespoon of oil and that’s a large onion thinly sliced. another wee dash of salt because this draws the moisture out of the onion and it will help your onion to sweat down a wee bit quicker. So, this will take you about five minutes. You can keep going as long as you like. You know, you might want these crispier, but this was absolutely fine for me. So, I’m just going to pop these to the side, check my tatties. Just want to stick a knife in and if they’re nice and tender, just drain away the water. I like to turn my heat down as low as possible and just keep the heat on whilst I’m mashing the potatoes because I think it helps to get rid of excess moisture and helps the lumps as well. So once the water’s drained, I’m going to add a tablespoon of butter and a splash of whole milk as well just to get started. Then I’m just going to go in with my hand masher. I’m not looking for these to be super smooth, just as smooth as you like. And then another we touch of milk. And just keep going until you’re happy. Then I’m going to add my fried onions. And just give these a really good stir. And and I’m also going to add some fresh chopped parsley. And then some grated cheddar cheese as well. Obviously, you don’t need to use the hand masher for that. Just use a wooding spoon or a spatula, you know, whatever sort of spoon you have. So, a couple of tablespoons of fresh parsley. And like I said, just a wee handful of grated cheddar as well. The rest of the cheese we’re going to add over the top just before it goes in the oven. So yeah, with your spoon, just make sure this is well stirred through. And then just keep going until you’re happy. And then you can just set this to the side to cool down for 5 minutes or so. So it should be looking something like this. Lovely. I could eat that just on its own. So this is my corned beef here. I am using about a can and a half of corn beef. You might want to use more or less depending on how much you’re making. And I’ve also got a can of baked beans and tomato sauce. I like to warm the corn beef through for about 30 seconds in the microwave just to make it nice and easy to push down into a single layer. I like quite a thick layer of this and then the layer of baked beans then a layer of the mashed potato and it all just melts in and oh when it goes into the oven and all bakes together. It’s just so tasty. So I’m going to pop a layer of baked beans on top of this. These are just cold baked beans. You don’t need to warm these through because obviously it’s going into the oven for half an hour anyway. So, they will be warm by the time they come out. And then just top this with your mashed potato, onion, parsley, and cheese. I like to pop this on wee blobs and then just sort of join up and spread it evenly on the top. Yeah, just lovely. It doesn’t take you any time at all. And like I said, it’s really, really tasty. So, once you’re happy, the last thing we’re going to do is add on some grated cheese. That’s completely optional cuz obviously there’s cheese and your mashed potato already, but I like to add a wee bit extra just because it goes nice and bubbly and brown on the top. You won’t need much because like I said, you do have cheese already in your mashed potato. So, get this into the oven in the middle of your oven for about half an hour. Gas Mark 6, 180 C if you’re using a fan assisted oven or 200C for a conventional oven. and it will come out looking something like this. Now, do let this cool down for a good five minutes because this is going to be so hot and you don’t want to burn yourself. So, just be very careful at this point. So, I’m just going to pop this onto the plate and show you what it looks like. But, let’s be honest here. You know, it’s not the prettiest thing in the world to look at. It’s not the most aesthetically pleasing thing you’ll ever see on a dinner plate. But let me tell you, the flavors of everything combined were so tasty and like I said, very easy to make. Mr. Watts for tea wanted extra baked beans with his, but I felt as though, you know, there’s plenty of baked beans in there already. So, I had beetroot. I love sliced beetroot with this kind of thing or even with a shepherd’s pie just to cut through that very rich filling. But yeah, really tasty. Oh wow that looks so good. I've lost my appetite a bit the last few days but I think a plateful of that would tempt me. Got to ask though, am I the only person that doesn't like parsley?
My grandma used to make this, so delicious! Tinned corned beef was greatly appreciated in our household! I must make this.

One tip.Stir some Worcester Sauce through the baked beans before layering on top of the corned beef.
My mother used to make this when she got back from work and I got back from school ..we were skint and it was a fantastic tasty cheap meal in those days!

That's an interesting way of making it, similar to shepherd's/cottage pie. I like to make it in a pan – fry a chopped onion then add cubes of corned beef and halved tinned potatoes, fry on a medium high heat to get some colour on everything, then serve with baked beans and a runny fried egg on top.

Add a mint leaf to your tatties after boiling them. Trust me the extra flavour is amazing.👍
My late mother did something similar but instead of beans it was defrosted frozen peas and Oxo gravy topped with mash. Beans served on the side!
Looks good, I'd likely use just one can of beef and add a can of lentils and sone passata for the base. Also more ONIONS!! 🙂

An interesting take on corn beef hash my mother used to do it all in one pan with onions I do it myself in chunks of corn beef layer of onions with cheese little bit of gravy and mash layers It is delicious I will give this ago for sure

This sounds lovely, i've only ever made it by mixing the corned beef into the mash and serving the beans separate! Will have to give it a go in layers like this 🙂
