



This dish has a large yellow onions diced in it and 16 pearl onions.
I’ve never worked with pearl onions before, they’re small but they’re mighty & also a pain in the butt to peel.
This dish took so much longer to prep than the recipe said, it was about 5.5 hours total when it claimed to be 3.5-4.5 hours, but it was my first time making it.
My husband said it’s in the top 5 meals I’ve ever made and way better than your typical “pot roast”.
If you haven’t made it yet I truly recommend it. I used Julia Childs recipe but opted to add more pearl onions and added garlic powder.
Next time I think I would add more carrots and more diced onion.

Oh yeah I’m with you on the pearl onions. I go a little crazy and take off an entire layer of onion on those bad boys just to avoid fussing with the skin- it feels bad but also goes faster. Looks delish!

We buy the frozen pearl onions just to avoid peeling the fresh ones.

Reducing the sauce is what truly makes this dish! It turns into pure concentrated umami flavor!
Pro tip: buy frozen pearl onions. They are a PITA to peel.

Bourguignon is a labor of love but it’s so worth it.
It doesn’t look worth it – if you show somebody a picture of it and tell them it takes four hours to make they’ll likely say “I can just throw all that in a crock pot and come back later.”
I understand that thought but also they’re so wrong. This dish is true savory comfort in a bowl. Make this on a weekend between Thanksgiving and Christmas and blow some minds.
I read that you can boil pearl onions separately for a few minutes and they’ll be easier to peel. I’ve only made them once, but I used this method & didn’t find them too frustrating to peel! Skin came off pretty easy.
