Today’s Croctober recipe is this warm and comforting Zupa Tuscana soup made with noki. First, you’re going to want to brown one pound of sausage with one diced onion. This could be breakfast sausage, sweet sausage, or Italian sausage. Use whatever you like best. Adding that to the crock pot along with a lot of chicken broth, some grated Parmesan cheese, and all of my seasonings. Give that a good stir and then add in some chopped up celery. You could also add carrots to this if you want to bulk up the veggies. Cook that on low for 2 hours. Next, we’re going to thicken it up a little bit. I’m adding some cornstarch into some heavy cream and giving that a really good whisk. Pour the mixture into the crock pot. This is going to make it so thick and creamy. At this time, I’m also adding in one package of shelf stable. Make sure to pull them all apart. They tend to stick together. Cook this another 30 minutes. And then we’re going to add in some chopped kale. You want to cut this into bite-sized pieces. Mine’s a little bit too big. Give it a good stir and cook for 30 more minutes to wilt that kale. Spoon this cozy soup into bowls and enjoy.
