Easy recipe.
Preheat air fryer to 400. Use super firm tofu if you have it, otherwise press extra firm tofu until pretty dry.

Boil water and pour it over the tofu – add salt (don't skip this btw).

I pat it dry again after 5-10 minutes, but leave some slight dampness to bind for the next steps.

Add seasonings, I used paprika, black pepper, cayenne, garlic powder and onion powder. Add cornstarch (I used 2 tbsp, but 1 is good too).

Toss/mix until there are minimal to no bare spots. Cook for 25ish minutes, open the air fryer every 10 minutes to shake the bits around. Enjoy!

I used a cottage cheese sauce (cottage cheese, popcorn cheddar seasoning, water) for a bit more protein, but you can skip this and go for whatever sauce you want.
