Today’s bread, what do you think 🙂

Ingredients:
– 100g starter
– 375g water
– 500g all-purpose flour
– 12g salt

  1. Mixed the starter and water, then added the flour.
  2. Let the dough rest at room temperature for 1 hour.
  3. After 1 hour, added salt and performed 4 rounds of stretch-and-folds, spaced 30 minutes apart.After the final stretch-and-fold, let the dough sit at room temperature for about 4.5 hours. Shaped the dough and placed it in the fridge overnight (about 12 hours)
  4. Baked in a Dutch oven: I preheated the Dutch oven to 500°F / 260°C. Baked for 30 minutes with the lid on and added water to the oven for steam. Finally, I removed the lid, lowered the heat to 428°F / 220°C and baked for ~25 minutes more.

    I have one question, why are you adding steam then putting a lid on the dutch oven?

    That looks awesome!!! Seems like a long bake time for that temperature, but I’d buy that!!! Really nice job!

    This looks fantastic!

    I love the scoring — how long does that take? I’ve been experimenting with giving my dough a short freeze during the oven preheat, allowing me more time for decorative scoring. Do you do that or are you just really quick?

    How do u all get your flour so evenly distributed on the loaf, do you roll it in the flour before scoring? Beautiful loaf!

    I feel envy, I scrapped my starter last night, it developed mold.

    It looks great, soon will be making loads of bread.
