This is authentic cucina toscana, made from simple ingredients and patience.She starts with a base of finely chopped onion, celery, parsley, and sometimes carrot.Then she adds minced meat, chicken livers, anchovies, and capers, letting them cook slowly in extra virgin olive oil until everything melts together.A splash of Vinsanto, a ladle of warm broth, salt, pepper, and time.. that’s it.No measurements, no tricks, just intuition and heart, the essence of real Italian home cooking.
We spread it warm over crusty toasted bread, drizzle a touch of olive oil, and that first bite… it’s Tuscany.Rustic, rich, savory, comforting.. the kind of Italian comfort food that makes you stop talking for a second.
