


Just picked up a Huntsman and smoked off some party wings after I did the burn in the day before
Came out crispy as hell and good flavor. Need to dial the smoke back a little (I guessed on the wood amount based on my old leaky smoker)
6lb+-
Dried and put on racks in the fridge overnight, uncovered
Tossed and coated with olive oil and high flyin chicken
Smoked at 250* for 1hr with apple
Pulled and let chill while smoker came up (outside while it was windy and 43*, other wise I would put in the fridge for a bit)
Cooked at 400* for 45min-1hr ish, until the drums hit 185*

Looks pretty much perfect to me.
Chicken takes smoke super easy. Over doing it isnβt hard. I think those look near perfect though. Very nice.

If I may, I love your stove top and oven. And the stock pot faucet is a nice addition. Did you build out the kitchen? The tile back splash is very handsome. ππ
