Has anyone else been having issues with waking up way too early after the time change? I woke up at 4am and started on dinner… I split it up so that half of it would go to the teacher’s lounge for parent teacher conference day, and half of it would be saved for us for dinner. This was the perfect cozy dinner alongside some homemade sourdough. Recipe (adapted from Emeril Lagasse) Ingredients 1 can (15 oz) chickpeas, rinsed and drained or 1/4 lb dried chickpeas, soaked overnight 3 tbsp olive oil 2 lbs boneless, skinless chicken thighs, pre-cut into 2-inch pieces Salt, to taste 1/4 tsp freshly ground black pepper 1 medium onion, diced 3 celery stalks, diced 2 tsp fresh or ground ginger 1 tsp turmeric 1 tsp ground black pepper 1 tsp ground cinnamon 1/2 tsp ground nutmeg 1 tsp garlic powder 1 tsp onion powder 3 cloves garlic, minced 1 (28-oz) can diced tomatoes with juices 6 cups chicken broth 1/2 cup dried green lentils 1/2 cup long-grain rice Fresh cilantro leaves Fresh parsley 2 tsp fresh lemon juice
Directions • Prep chickpeas: If using dried, soak overnight and drain. If canned, rinse and drain; add later with the rice. • Brown chicken in olive oil in a large pot; season lightly with salt when adding to the pan. Remove and set aside. • Cook onion and celery until soft. • Add garlic and all spices; stir 1 minute. • Add chicken, tomatoes, chicken broth, lentils, and soaked chickpeas (if using). Simmer covered 1 hour. • Stir in rice (and canned chickpeas, if using). Cover and simmer 30 minutes. • Stir in cilantro, parsley, and lemon juice. Cook 5 minutes uncovered. Adjust salt.

Allerdings durch die Erinnerung daran und „Spielen“ mit den Gewürzen klappt es. Sie hat phantastisch gekocht. Mein Mann fragt immer, woher bloss kannst du so gut kochen?😂.
