Today we’re going to prepare a pork tostada. Place the pork chops in the slow cooker. Add onions and bay leaves. Season with pepper and cover the chops with water. Let it cook for 2 and 1/2 hours. Pour the beans in a pot and pour enough water to cover them. Cover with the lid and cook for 1 hour. Add wajillo peppers and water to another pot and let them cook for 30 minutes. Take the pork chops from the slow cooker. Now that the chops are soft, shred them with a fork. Place the guides and the onions in the blender. Add a bit of pepper and one cup of pork broth. Blend everything until you get this sauce. Spray olive oil on a pan and cook the shredded pork for a few minutes. Pour the sauce making sure to cover all the pork strips. Let it cook for another 5 minutes. Add olive oil to another pan. Pour the beans and some water from the pot and add salt and chili flakes. Let the beans cook for a little bit and start mashing them until you get this paste. The reffried beans are ready. Now it’s time to serve your tostada. Start by spreading the rough fried beans. Add a generous amount of pork. Top with lettuce, avocado, cheese, and sour cream. And finally, add a bit of the poor wajo sauce. Your tostada is ready. Enjoy.
