INGREDIENTS:
1 lb ground Italian sausage
2 cups Spinach
2 stalks Celery (finely diced)
1 large carrot (finely diced)
1 yellow Onion (diced)
4 garlic cloves (minced)
1 tbsp Tomato paste
1 tbsp Calabrian chili paste
1/2 cup dry White wine
4 cups Chicken stock
2 cups Crushed tomatoes
2 cups 3 cheese Tortellini
1 cup Heavy cream
1 tsp Basil and chive Boursin cheese
Fresh Basil
Fresh Italian parsley
Italian seasoning
Garlic powder
Black pepper
Salt
I bet I could show you how to make the most flavorful sausage tortillini soup that comes together in only 30 minutes. This one is for those fall nights when you need something cozy but don’t have much time to make dinner. I’m using about a pound of mild Italian sausage. And notice how I’m not breaking it up too much. You don’t want the pieces as small as when you’re making spaghetti or tacos. So, they should be little bite-sized pieces of sausage. And you’re going to brown that on medium high heat for about 4 minutes. Next, I’m adding the carrots, celery, and the onions to the pot. And I let that sweat down a little before going in with the garlic and some of that Calabrian chili paste. But if you don’t want it spicy, you can just get the chili paste. Delaze the pot with some dry white wine and chicken stock. And you’re going to add in the crushed tomatoes and season with garlic powder, black pepper, Italian seasoning, and salt to taste. Allow that to come to a boil first and then add in the torillini, fresh parsley, spinach, heavy cream, and a little of that basil and chive borson cheese to make it nice and creamy. I also felt like the basil from the Borson cheese would go really well with the flavors from the Italian sausage and the crushed tomatoes. After tasting it at this step, I also felt like I wanted more of that garlic flavor and Italian seasoning, so I went ahead and added that in. For this recipe, I’m using a three cheese torillini I got from Audi’s. And the tortoillini doesn’t need any more than four to 5 minutes to cook. So, after that, you’re all done. While that was finishing up, of course, I made some garlic toast to go on the side because it’s only right. Look at this soup, y’all. If you like those marry me recipes, then you will love this. Thank you for this recipe β€! Iβm trying to pack my freezer with lots of soups. I was running out of ideas. I got gumbo, base for cabbage soup, chicken and dumplings, taco soup, gumbo, and now this. I can feed my my family, mother, and mother in law easier with soups. I can sneak lots of veggies in soups with no complaints about what they donβt eat ππ. They all complain I donβt eat radishes, zucchini, squash, chia seeds , or beets. Oh YES YOU DO ππ! They just donβt know I sneak it in π.
