Did you know Fetachccini Alfredo is actually named after a real guy? And join me as we travel back to Rome in 1914 where a young chef named Alfredo Dleio was struggling to feed his wife after childbirth. Apparently, she was complaining that Roman food was just too complicated. So, he decided to make a simple dish of fresh fetuccini tossed with butter and good parabo reanu tempt her appetite. She fell in love with the dish. He put it on his menu and the rest is history. The key to a true fetuccini alfredo was using lots of butter and cheese which emulsified with the pasta water to form a creamy sauce without cream. In the 1920s, Italy started seeing their first American tourists which included Hollywood actors Mary Pigford and Douglas Fairbanks who fell in love with it during their honeymoon in Rome. These Hollywood starlets made it all the rage in the US and there the dish evolved adding heavy cream garlic, more butter, very American. Toss some shrimp, toss some chicken on there. The Italian dish today remains simple and light.
