Recipe
1. 500-700 gr leeks (cut into slices)
2. 100 gr olive oil
3. 200 gr rice for risotto
4. 1 dry onion
5. 2-3 garlic cloves
6. 1 lemon (juice)
7. 1 lt water
8. dill
9. salt-pepper
Optional
1. 2 vegetable cubes
2. some white wine
Let the mixture boil for about 25-30 minutes until the rice is done.
Procedure
Please put the onion along with the leeks in the beginning of the procedure and let them soften. Then add all the rest of the ingredients. Please note that in this recipe I have stated the basic ingredients of this dish. Other ingredients that may be added are carrots, tomatoes or celery.
Descrption
Prasoryzo is a very common, hearty, and often vegan or vegetarian winter dish made with leeks, rice, onions, dill (or mint), and lemon juice, and often served with feta cheese on the side. Served hot, lukewarm or at room temperature. Some recipes also recommend a mixture of egg and lemon added some minutes before the end of the boiling procedure, to create a richer flavor.
