I found this recipe for cornbread and ended up making it. It’s healthy, low-sodium, and actually tastes like cake! 

  • 1 cup gluten-free all-purpose flour
  • 1 cup yellow cornmeal
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 3 1/2 teaspoons baking powder (low-sodium if possible)
  • 1/3 cup butter, melted
  • 1 large egg (let it come to room temperature)
  • 1 cup milk (1% fat)
  • Cooking spray
