Singapore’s Fort Canning Park welcomes a new addition to its culinary landscape with the opening of L’Amo Bistrò del Mare. The award-winning restaurant from Dubai, recognised by Gambero Rosso for its excellence in Italian coastal cuisine, marks its first overseas venture with a menu that blends Mediterranean tradition and contemporary finesse.

Guided by Chef Daniele Sperindio, Director of Culinary and F&B at METT Singapore, L’Amo Bistrò del Mare brings its signature philosophy of uniting the essence of the sea with the warmth of Italian hospitality. The restaurant offers a vibrant yet elegant setting where guests can experience refined coastal cuisine and a gorgeous view.

The menu pays tribute to Italy’s coast, built on seasonal ingredients and classic techniques. Le Tre Tartare opens the meal with three takes on Mediterranean flavours — sea bass with bottarga, tuna belly with lime mayo, and Sicilian red prawns topped with caviar. 

The Polpo al Josper follows, featuring octopus grilled over embers and served on a carrot, ginger and cardamom purée with a balance of smoke, spice and freshness.

Handcrafted pasta takes centre stage. The Spaghettone Cacio & Pepe adds Japanese uni to the Roman classic, while the Tagliolini Lime & Caviale is tossed in lime butter and finished with Italian caviar. 

From the sea, the Impepata di Cozze serves mussels steamed in wine, garlic and citrus, and the Catalana dell’Amo lets diners choose their seafood, tossed with tomatoes, crisp vegetables and a light Catalana dressing.

For something heartier, the Costolette d’Agnello alla Brace delivers lamb chops marinated for 36 hours, grilled in the Josper oven, and paired with red cabbage, mandarin compote and a rich jus.

Desserts keep things classic: Profiteroles filled with hazelnut mousse, Cannoli Siciliani with ricotta and pistachio, and a tableside Tiramisù that mixes nostalgia with a touch of theatre.

Drinks round out the experience with cocktails like Florence (gin and bergamot), Rosato (a sparkling spritz) and Viola del Mare (butterfly pea tea and lavender). The Mela Piccante mocktail adds a gingered kick, and an extensive wine cellar of over 300 Italian and French labels completes the experience.

Design-wise, its interiors feature floral motifs, nautical touches and sunlit spaces that shift from bright and relaxed by day to warm and intimate by night, accompanied by live piano music and Italian classics.
