Avgolemono (Greek: αυγολέμονο or αβγολέμονο, literally egg–lemon) is a family of sauces and soups made with egg yolk and lemon juice mixed with broth, heated until they thicken. The key is to beat the egg whites till foamy and thick; this is an arm workout! This is where most people go wrong. This technique helps the soup come out creamy and hearty, without the cream. It’s a staple in every Greek’s home — consumed weekly by most!
